Ho Ho Christmas Bars

Ingredients needed for Ho Ho Christmas Bars:

3/4 cup sugar
2/3 cup shortening
1/2 cup softened margarine

2/3 cup evaporated milk
2 tsp vanilla extract
pinch of salt

1 tub dark chocolate icing
1 box devils food cake mix

Preparation Instructions:

Mix devils food cake mix according to instructions on the box, bake and let it completely cool.

Combine sugar, shortening, margarine, evaporated milk and vanilla, adding just a little pinch of salt. Beat the mixture until it has a fluffy texture. About 10 to 15 minutes and spread over cooled cake.

Melt chocolate icing in the microwave for about 20 seconds, just enough to soften the icing. Spread the chocolate icing on top of the white layer.

Slice the cake into bars and store in an air tight container.

Coconut Snowman Recipe

Ingredients needed to make Coconut Snowmen:

2 1/2 cups all purpose flour
2 tsp baking powder
1/4 tsp salt

1/2 cup softened butter
1 cup sugar
2 eggs
1 1/2 tsp vanilla

white icing
3 1/2 ounces shredded coconut

Preparation Instructions:

Preheat over to 375 degrees.

Mix flour, salt and baking powder together in a small mixing bowl. In a larger bowl, combine butter and sugar and cream together with a mixer until it becomes fluffy.

Add the flour to the butter mixture just a little at a time, mixing well. Place the dough in plastic storage bag, or wrap it in plastic wrap and chill in the refrigerator for 30 minutes.

Roll the chilled dough out on a flat surface until it’s about 1/8 inch thick. Use a snowman cookie cutter to cut out the shapes and bake on an ungreased cookie pan for 7 to 10 minutes, or until lightly browned.

After the snowmen have cooled, spread a thin coating of white icing on them and cover in coconut.

If you don’t have a snowman cookie cutter, you can roll the dough out into different sized balls by hand and press them together to create a snowman!

Easy Caramel Pecan Roll Recipe

Ingredients needed to make Easy Caramel Rolls:

1 – 2 cups brown sugar
1 stick butter or margarine 
1 tsp vanilla

canned buttermilk biscuits
pecans (halves or chopped)

Preparation Instructions:

Spread the pecans in the bottom of a pan or muffin tin.

To make the caramel, melt the butter in a large pan, add the vanilla and brown sugar. Stir the mixture constantly until the sugar is completely dissolved and the mixture has a smooth consistency.

Pour the caramel over the pecans and top with canned biscuits. Bake the rolls according to the directions on the biscuit label, or until the biscuits are brown.

Caramel pecan rolls are best when served warm!
