Brownies & Fudge

Moms Favorite Brownies

Ingredients:

3/4 cup butter
1 1/2 cup sugar
1/4 tsp. salt
3 eggs
3 oz. unsweetened chocolate, melted
1 cup sifted flour
1 cup chopped nuts

Chocolate Icing

1/4 cup butter
2 oz. unsweetened chocolate
3 cup confectioners’ sugar
4-5 tbsp. milk
1/2 tsp. vanilla

Cream butter, sugar and salt until light and fluffy. Add eggs, one at a time, beating well after each addition.  Blend in chocolate and flour. Stir in nuts, reserving 1/4 cup for garnish. Pour in well greased 15 1/2 x 10 1/2 inch jelly roll pan. Bake at 350 for 20 minutes. Cool 10 minutes.

Frosting:  Melt butter and chocolate over low heat; remove from heat.  Beat in confectioners’ sugar alternately with milk. Stir in vanilla. Frost brownies while warm; sprinkle with reserved nuts.

Easy Rocky Road Fudge Bars

Ingredients needed to make Easy Rocky Road Fudge Bars:

1/2 roll chocolate chip cookie dough
2/3 cup water
1/2 cup butter

4 7 ounce packages fudge frosting mix

1 cup chopped pecans
2 cups semisweet chocolate chips
2 cups miniature marshmallows

Preparation Instructions:

Preheat oven to 350 degrees.

Slice the refrigerated cookie dough and press it out onto a greased 13×9 inch baking pan. Bake for about 13 minutes, or until just lightly browned and set aside to cool. Read more…

Rocky Road Fudge

Ingredients needed to make Rocky Road Fudge:

3 cups miniature marshmallows
1 8 ounce chocolate bars
3/4 cups chopped nuts

Preparation Instructions:

Place the chocolate bars in a pan and melt slowly over low heat. Stir the chocolate constantly to prevent scorching.

Once the chocolate has completely melted, stir in the chopped nuts and marshmallows. Stir the mixture well to allow the marshmallows to completely melt.

Spread the fudge in an 8×8 inch pan that has been buttered and allow it to cool. This recipe makes 1 1/2 pounds of fudge.
